Once harvested, the outer fruit must be removed to expose the coffee bean. There are three main processing methods, each imparting distinct flavor profiles:
- Washed (wet) process: The fruit is removed before drying. Produces clean, bright, and acidic flavors.
- Natural (dry) process: Cherries are dried whole in the sun. Results in fruity, wine-like, and complex flavors.
- Honey process: A hybrid approach — some fruit remains during drying. Delivers sweetness with balanced acidity.
🔥 Roasting: Where Flavor Comes Alive
Green coffee beans are virtually flavorless. It's the roasting process that unlocks the hundreds of aromatic compounds responsible for coffee's rich taste and aroma. At temperatures between 180–230°C, beans transform from green to golden to deep brown.
